Chef's Night Out: Craft

We stayed on our home turf for this Chef's Night Out, during which we hung out with James Tracey of NYC's Craft and Colicchio & Sons. James was awesome, and it's true—there's no place like home.

James Tracey might be the coolest chef we have ever shot for Chef's Night Out. Usually when we first meet up with our host, there's a 30-minute warm-up period, but not with James. Within seconds after we arrived at Craft, we were looking at freshly slaughtered suckling pigs, meeting his all-star butcher, and joking around with his sous-chefs, Melanie and Mac. We were shocked by how relaxed James is, considering he's the executive chef at Craft and Colicchio & Sons. He likes his razor clams raw and his beer cold. He also likes Il Buco Alimentari & Vineria, Motor City, and Paddy Maguire's as after-work drinking destinations. Chef Tracey is the man. Enjoy!
