Szechuan and Honey-Glazed Ribs Recipe

for the spice mix:
1 cup szechuan peppercorns
⅓ cup granulated sugar
1 tablespoon kosher salt

for the ribs:
2 pounds 3 ounces|1 kilogram beef ribs (about 6)
3 tablespoons|45 ml olive oil
kosher salt, to taste
¼ cup|60 ml honey


  1. Make the spice mix: Place the peppercorns in a spice grinder and pulse until coarsely ground. Mix in the sugar and salt and set the spice mix aside.
  2. Make the ribs: Heat the oven to 450°F|230°C. Drizzle the ribs with the oil, season with salt, place on a baking sheet, and roast until golden, about 12 minutes. Cover with foil and reduce the oven temperature to 300°F|150°C. Bake the ribs until tender, about 2 ½ to 3 more hours.
  3. Remove the ribs from the oven and heat the oven to broil. Sprinkle the ribs with the spice mix and drizzle with the honey. Broil until crispy, about 2 more minutes. Cool slightly before digging in.
