
Ed Loveday is an expert when it comes to spirits. He’s a co-founder of Darlinghurst drinking spot The Passage and Rushcutters Bay restaurant ACME, where he heads up the bar. We asked him to share some of his cocktail wizardry with us, and he said yes.

Charred Pineapple Pina Colada

Charring pineapple on a BBQ caramelises and intensifies the sweetness. It gives the classic Pina Colada depth and another layer, which plays perfectly with the spiced rum and cinnamon.
Spiced Peach Julep

Fruit infusions are the perfect beverages all year round. A little bit of early prep means that when it’s time for a drink you just whip the bottle out of the fridge and serve over ice. It’s as easy as that. Peaches and mint is a classic combination, but you could really mix up the recipe below using any fruit you like.
