Ingredients

1 cup white rice flour
½ cup cornstarch
½ cup potato starch
kosher salt and freshly ground black pepper, to taste
cayenne, to taste
1 ½ cups|355 ml sparkling water
1 large white onion, thinly sliced
2 quarts|1 liter 893 ml vegetable oil
Directions
- In a medium bowl, mix white rice flour, potato starch, cornstarch, salt, pepper, and cayenne.
- Whisk in the sparkling water until mixed and let the batter sit for 15 minutes.
- In a large saucepan, heat vegetable oil to 375°F.
- Dip onion rings in batter. Drop onions in oil and fry until golden, 1 ½ – 2 minutes.
- Serve immediately with your dip of choice.
