The French are so smart that they figured out how to eat tons of cheese without turning into human lardons like the rest of us. They've also mastered the art of the breakfast sandwich.
But there is no good logic for relegating a breakfast sandwich to breakfast time only. The Croque Madame is a perfect case for eating the last meal of the day like it's your first.
It's essentially a grilled cheese sandwich—already a known hangover helper—on steroids. And it couldn't be simpler to make.

Perfected by Kris Morningstar of LA's Terrine, this sandwich—in addition to being a melty, carby joy—is made saltier with the addition of ham, tangier with a pat of Dijon mustard, creamier with a smear of béchamel, and richer with a fried egg.
