Tyreece Johnson of BiteMe Cheesecakes has been baking cheesecakes since he was 15 years old. At some point he began creating smaller versions complete with toppings. The toppings soon took on uses of their own like this strawberry reduction that Ty uses for a peanut butter and jelly sandwich.Recipe: PB&J
Strawberry reduction (Yields about 15oz)
16 oz strawberries
4 tablespoons sugar
2 tablespoons balsamic vinegar
2 tablespoons Sauvignon blanc
1 tablespoon fresh lemon juice (optional)Cut strawberries into half inch slices. Mix with remaining ingredients and let stand for 1/2 hour.Pour the mixture in a saucepan and bring to a boil. Once the strawberries start to boil, reduce to a simmer. When the strawberries have cooked down by 1/4 to 1/2 -- this depends on how thick you prefer it. Remove from heat and allow it to cool.
