In the season 1 finale of Moltissimo, Mario Batali welcomed Missy Robbins and Action Bronson to the MUNCHIES Test Kitchen, and as you can imagine, shit got real. There were kitchen accidents, discussions about what it takes to rap in front of thousands of people, and one incident of dousing pork in milk.
Now, we wouldn’t normally tell you should cover your pork in whole milk, but when Mario Batali tells you, you listen: “This whole thing is going to caramelize at the base, the milk is going to evaporate it’s going to become the lactic dream of love. It’s like Charlie Parker is blowing on it, and all the sudden it turns into something that’s gonna be amazing.”

And as Missy and a skeptical Action can tell you, amazing it was. Fennel pollen-dusted, garlic-studded pork roasted to perfection, and served over a bed of Spanish onions is about as close to heaven as you can get. And it’s all thanks to the milk. Well, that and the legend cooking it.
