Matthew Lief’s parents gave him free reign to experiment with food. His stomach veered to “salty, greasy, fatty” -- the basic tenets of a menu he dubs country style fare meets street food. Think skewered bricks of pork belly and rich lamb burgers made using quality ingredients. Make Landhaus’ signature BLT using those bricks of pork belly.

Recipe: BLT
1 Large slab of roasted pork belly, cut into ½-inch slices, or thick cut slices of high quality bacon
1 baguette, quartered and partially sliced
Good quality mayo, homemade or Hellmann's
1 head of red-leaf lettuce, separated into large leaves
A ripe beef-steak tomato, sliced thick and salted

In a hot skillet, sear pork belly or cook bacon until crisp. Lightly toast bread and top with a healthy amount of mayo, a few lettuce leaves, bacon and slices of tomato.
