Cretan Spinach Pie Recipe

Go Greek with fresh herbs, spinach, and feta, wrapped in dough and pan-fried.

for the spinach pie filling:
4 cups raw spinach
4 scallions
1 cup dill
1 cup mint
3 cups boiling water
2 ½ tablespoons olive oil
½ cup feta

for the batter:
2 cups all-purpose flour
½ cups water (add more as needed)
olive oil for pan


  1. Chop up raw spinach, scallions, dill, and mint. Add boiling water and squeeze all the water out. Add the olive oil to the spinach mixture. Add the feta cheese.

  1. Add the water and flour in a bowl. Mix really well, adding more water or flour depending on consistency. Roll out the dough until it's a very, very thin sheet. Cut the dough into squares (about six). Put spinach filling in the middle and fold over all edges so it's completely sealed.

  1. Add a bit of oil into the frying pan and place the pies in the pan. Cook until they are golden brown on each side.
