Passionfruit Curd Recipe

Sweet and tropical, this simple curd is the perfect addition to desserts.

Makes about 2 cups
Prep time: 5 minutes
Total time: 25 minutes

Ingredients

6 ounces|170 grams passionfruit purée
1 cup|200 grams granulated sugar
6 Makrut lime leaves
4 large eggs
½ cup|120 grams coconut oil

Directions

Combine the passionfruit, sugar, lime leaves, and eggs in a medium saucepan over medium-low. Cook, stirring, until thickened, then whisk in the coconut oil. Pass through a fine mesh strainer and place in a jar. Cover and refrigerate until ready to use. Curd will keep, refrigerated, for up to 1 month.
