Are you sick of turkey by now?

Nonsense. No such thing.

In fact, the day after Thanksgiving deserves to be a holiday in its own right (and we don't mean Black Friday). Let's christen it The Day of Leftovers.

You could stick to a plain-old sandwich or a warmed-up plate of stuffing and mashed potatoes, but why not aspire to more?

RECIPE: Deep-Fried Turkey Balls

Admittedly, this dish of deep-fried turkey balls from Silicon Valley's TJ Miller and his private chef Andy Windak calls for fresh turkey. (And maybe you're just some kind of Thanksgiving psycho who buys out all the turkeys in preparation for the holiday.) But we won't tell anyone if you use some of yesterday's bird, as long as it's moist and flavorful.

Miller and Windak take the cooked meat and mix it with eggs, herbs, and seasonings. They then dredge balls of the mixture in chickpea flour before frying the hell out of them in duck fat.

And you thought yesterday's meal was decadent.
