Today is officially Spring, which means that it's almost officially summer, which means that you a perfectly reasonable excuse for making lighter cocktails.

Time to whip out the coconut water, vanilla beans, white rum, and limes and make a balanced, refreshing granita that will make you forget how dark and brutal this winter was.
