This Easy, Healthy Vegan Curry Has Reggae Roots

Reggae singer Chronixx showed us just how good veggie eating can be when he shared this hearty stew of spicy pumpkin, potato, cauliflower, and carrots.

In case you've been out of the healthy-eating loop, the Rastafari movement was touting the virtues of vegetables long before spiralizing and smoothie bowls became a thing. Many Rastafaris follow vegetarian or vegan diets, consuming Ital foods without processed ingredients or additives.

Jamaican reggae star Chronixx recently showed us just how good veggie eating (and impromptu kitchen dancing) can be when he shared his recipe for roots curry: a hearty vegan stew of pumpkin, potato, cauliflower, and carrots.

RECIPE: Vegan Roots Curry

Chronixx makes his roots curry "freestyle," i.e. without worrying too much about exact measurements or fancy chopping techniques. Simply heat coconut oil and curry powder in a pan; throw in aromatic garlic, scallions, and ginger; and simmer with the chopped veggies until tender.

Serve with coconut steamed quinoa, and we guarantee you'll be grooving around the kitchen, too.
