Celebrate Spring with This Artichoke and Salted Yogurt Salad

And yes, there are sweet potato chips.

It seemed like it would never happen, but winter is finally over. Like over, over. No matter where in the country you live, it's warm out there.

That means it's time to ditch the side dishes of cheesy potatoes and root vegetables, and welcome the increasingly longer days with, you know, actual vegetables.

This artichoke salad comes courtesy of Kate Button of Cúrate fame. With mixed spring greens, artichokes, radishes, tarragon, and greek yogurt, then dressed with a simple lemon vinaigrette, it screams spring.

But being that this recipe comes from an expert in Spanish cuisine who got her start at elBulli, there had to be a touch of whimsy. And in this case, that s is the addition of gloriously crunchy sweet potato chips.
