This Recipe Turns a Classic Mexican Pork Dish into Perfect Fish Tacos

These fish tacos are definitely not “pure” Mexican food, because you would never have that protein with that marinade. But who cares? They’re delicious.

Taco Tuesday is still the best.

If you're a seasoned taco-eater (and we hope you are…. hmm), maybe you've been fortunate enough to experience the flavor perfection that is pork prepared al pastor, a Central Mexican dish wherein tender pork takes a cue from Lebanese and Turkish shawarma and döner kebab, and is marinated in a fiery spice mix with pineapple, cooked rotisserie-style, and shaved off in thin slices right into your waiting tortillas.

For this version, created by Gabriela Camara of Contramar and Cala, we'll use grouper instead of pork. Marinate your fish in a blend of garlic, paprika, tomato, onion, cumin, and three different kinds of chilies, and don't forget the sautéed pineapple. Sweetness plus spice equals magic.
