Here's the thing: Creamed spinach is good. And somehow, despite us all knowing that when we taste it in all its creamy, vegetal glory, we rarely sing its praises.

So let's do that now: Hell yeah, creamed spinach. Not only is it delicious as all hell, but it's the perfect side for pretty much any occasion, from Thanksgiving dinner to taco night to whatever the hell else feels worth eating some gussied up greens over.

This recipe is a little bit country, a little bit rock 'n' roll. You'll find the melty wonder that is Velveeta making its cheesy base smooth as silk, but a dash of Pernod adds complexity and a whiff of sophisticated je ne sais quoi.
