Kale Salad with Berry Dressing Recipe

Kale salad just got a lot less "basic."

Total time: 15 minutes

Ingredients
5 raspberries
3-4 blackberries
1 cup balsamic vinegar
1 tablespoons honey
1/2 teaspoon dried oregano
2 garlic cloves, minced
kosher salt, to taste
1 cup olive oil
2 cups kale, roughly chopped
1 tomato, cut into wedges
½ red onion, thinly sliced
1 carrot, peeled

Directions

1. Make the dressing: In a small mixing bowl, whisk together the berries with the vinegar, honey, oregano, garlic, and a pinch of salt, gently breaking down the berries as you do. Slowly drizzle in the oil while whisking constantly to form a vinaigrette.

2. In a large bowl, toss the kale with the tomatoes and onion.

3. Using a peeler, take off the outer skin of a carrot, then peel carrot directly into the salad bowl.

4. Add dressing to salad to taste and toss to coat the salad.
