Everyone knows if there's one real secret to great pasta, it's having Mario Batali cook it for you. Unfortunately, that's not usually an option, but (unless you have an Italian nonna who cooks the lasagna you grew up eating) the next best thing is making your own pasta using Mario's recipe.

And with this, we are here to help.

Mario stopped by the MUNCHIES Test Kitchen to cook for Jimmy Fallon and Mary Giuliani during an episode of Moltissimo , and he made this ravioli al'Amatriciana—his take on the town of Amatrice's classic dish, bucatini Amatriciana.

If you don't feel like shelling out for guanciale, feel free to use bacon—or any other cured pork product. Fresh pasta + salty cured pig + tons of butter and Pecorino Romano? That's amore.
