Syrian Toshkas Recipe

A grilled pita filled with a thin layer of spiced, ground meat, Aleppan cheese, and thinly sliced tomatoes.

Ingredients
4 pita breads
½ pound freshly ground beef
2 each cloves garlic, crushed
1 fresh hot red chili pepper, diced
½ cup fresh parsley, finely diced
1 tablespoon Aleppo pepper
1 teaspoon allspice
1 tablespoon olive oil
kosher salt and pepper, to taste
4 each tomatoes, thinly sliced
1 cup grated Aleppo cheese or braided Armenian cheese

Directions

1. Cut each pita into two round halves.

2. Mix the beef with all the seasonings.

3. Spread a thin layer of raw ground beef onto one side of each pita. Add the cheese and a layer of tomatoes, covering the entire pita.

4. Close the pitas up, and then grill them over a medium-low heat for 5 to 7 minutes, turning them over frequently (every 30 seconds) so the exterior does not burn.
