Garlic Chili Dressing Recipe

Use this dressing on pretty much anything (although our favorite is with avocado and eggs on toast).

Makes: 3/4 cup
Prep time: 15 minutes
Total time: 25 minutes

Ingredients

10 garlic cloves, peeled
2 cups|500 ml canola oil
1 teaspoon|2grams chili flakes
1/2 teaspoon|2 grams smoked paprika
3/4 teaspoon|2 grams sweet paprika
1 1/2 tablespoons|20 ml toasted sesame oil
10 grams hondashi powder
3 tablespoons|4 grams bonito flakes
1/4 cup|60 ml grapeseed oil
1 tablespoon|15 ml cab sav vin
kosher salt, to taste

Directions

1. Using a mandolin, thinly slice the garlic cloves, taking care not to slice your fingertips!

2. Heat the oil in a small saucepan over medium. Working in batches, cook the garlic until golden and crisp, about 1 1/2 minutes. Using a slotted spoon, transfer the garlic to a paper towel-lined plate to cool.

3. In a medium bowl, mix the crispy garlic with the remaining ingredients.
