Hot Weather Calls for Cold Ramen

The combo of chilled ramen noodles, kimchi, and fresh veg may well be the tastiest way to keep cool.

After weeks of shivering over novelty flavoured cider and attempting to light barbecues in the drizzle, the weather gods have finally heard our prayers. Temperatures are in the late teens and it hasn't rained in more than seven hours—it's hot, people!

Now that the British summertime has officially arrived, it would be useful to know how to … er, feel a little less hot? We're not saying we want to go back to wearing two pairs of gloves and a thermal vest (you've had your turn, November), but we would enjoy not being a hot mess come the afternoon.

RECIPE: Cold Ramen

Step forward cold ramen. The combo of chilled ramen noodles, kimchi, and fresh veg may well be the tastiest way to keep cool.

First, make a simple soy vinaigrette with rice vinegar, sesame, and ginger. Then, cook your rice noodles and cold-flash in a bowl of ice water. Combine the two and garnish with whatever you have in that vegetable drawer—baby chard, pea shoots, and spring onions are all good picks.

Top with a poached egg and bask in the glory of your own chill.
