Rarebit Recipe

This is how England does a grilled cheese, and it's pretty damn good.

"Wash this down with a nice glass of port."

Servings: 4
Prep time: 10 minutes
Total time: 20 minutes

Ingredients

a knob of unsalted butter
1 tablespoon all-purpose flour
1 teaspoon English mustard powder
1/2 teaspoon cayenne pepper
4/5 cup Guinness
a very long splash of Worcestershire sauce
4 cups mature, strong Cheddar, grated
4 pieces toast

Directions

1. Melt the butter in the pan, stir in the flour, and cook until it smells biscuity but is not browning.

2. Add the mustard powder and cayenne pepper, then stir in the Guinness and Worcestershire sauce.

3. Gently melt in the cheese. When it's all of one consistency, remove from the heat, pour into a shallow container, and allow it to set until it cools down just a bit.

4. Spread the cheese in a thick layer on the toast and place under a grill. Eat when bubbling.
