When Erin Patinkin and Agatha Kulaga of Brooklyn's Ovenly dropped by our test kitchen they were on a quest for perfection.
They floored us with their attention to detail and let us in on the secrets of Ovenly's super flaky pies—namely, their use of cold ingredients, minimal kneading, and high oven heat.
But the real reason you probably clicked on this is because of the cinnamon fluff. It's a little cloud of marshmallow goodness infused with cinnamon and vanilla. The marshmallow is then crisped up with the ol' torch, giving this pumpkin a secondary sugary crust on top.
