This Is the Craziest Fish Dish You’ll Ever Make

Pesce all’acqua pazza—also known as “fish in crazy water”—is a whole red mullet infused with parsley, tomatoes, chili, and garlic.

Fish can be considered a pretty "out there" ingredient. It seems to require Ariel-esque levels of ocean know-how to identify a good catch and even then, there's always the risk you'll freak your dinner guests out with the smell. No wonder seafood is an area of culinary expertise many amateur chefs shy away from.

But who said cooking should be about avoiding the weird stuff with fins? We say embrace the crazy and reap its delicious consequences, even if that means having to do a little descaling.

RECIPE: Pesce All'Acqua Pazza (Fish in Crazy Water)

With this in mind, may we present perhaps the craziest fish recipe of all: pesce all'acqua pazza, also known as "fish in crazy water."

This cray-cray recipe comes from the legendary River Café in London. The fish in question is a whole red mullet and that zany water is a parsley, tomato, chili, and garlic concoction, used to infuse the entire dish with fresh Italian flavours.

The method itself is a bit more ordinary. Simply boil your water with the herbs, garlic, and tomato, before adding the seasoned mullet into the pan with some wine and cooking.

Serve atop two slices of olive oil-drizzled ciabatta. You'd be crazy not to.
