There's a particularly brilliant Portlandia sketch in which Steve Buscemi plays a vegetable marketing exec tasked with turning celery into the next kale. He tries everything from bringing back ants on a log to corporate espionage to agreeing to an indecent proposal.
But all he really had to do was throw together this simple celery salad.
This mix of celery, Medjool dates, parmigiano reggiano, and toasted almonds is crunchy, and refreshing, sweet and savory. It's topped with lemon juice, olive oil, and chili flakes, to add just enough citrus and spice to balance out the flavor and turn celery into a bona fide showstopper.
And if you have any leftover celery, feel free to make yourself some ants on a log. They're still as good as they were when your mom used to pack them in your lunchbox.
