Koji Rice Pudding Recipe

While koji is traditionally used to marinate meats, it brings an extra layer of sweet and salty deliciousness when you add a little bit to a simple dessert like rice pudding.

14 ¾ cups|3500 milliliters whole milk
12 ⅓ ounces|350 grams sushi rice
15 ⅞ ounces|450 grams granulated sugar
5 ¼ ounces|150 grams koji


  1. Add all of the ingredients into a pot, cover, and bring to a simmer.
  2. Cook until thickened and rice is tender.
