DIAMOND JUBILEE PICNIC – THE RECIPE
A perfectly British picnic of a cream filled pink lemonade vicky sponge cake, a classy blueberry and Cava jam with scones and some dog-food sausage rolls for the corgis, makes for a feast to rival the Queen’s very own Diamond Jubilee spread.
Pink Lemonade Cake

Ingredients
2 ¾ cup cake flour
4 teaspoons of baking powder
¾ teaspoon of salt
4 egg whites
1 ½ cups of white sugar
¾ cup of butter ½
cup of milk
½ cup of pink lemonade
1 teaspoon of vanilla extract
food colouring
lots x whippy cream
Step 1.
Whip egg whites separately.
Step 2.
Cream all other ingredients in separate bowl.
Step 3.
Fold two mixtures together with food colouring.
Step 4.
Put in two sandwich pans.
Step 5.
Bake at 180c for twenty minutes.
Step 6.
Fill with whippy cream and decorate.
Cava Jam & Scones
Ingredients
1 x bottle Cava
1x punnet blueberries
lots x sugar
Step 1.
Dump everything in a heavy bottomed pan.
Step 2.
Leave to reduce forever over a low heat.
Dog Food Sausage Rolls
Ingredients
1 x roll puff pastry
lots x dog food
Step 1.
Roll out puff pastry.
Step 2.
Slice into squares.
Step 3.
Plop dog food into squares.
Step 4.
Shape into sausage roll shape…duh.
Step 5.
Bake at 190c for 15 minutes.
