Pickling Is Your New Weekend Project

The weekend is here. Aside from the hour or so your hangover shaved off this morning’s start time, that’s a whole two days at your disposal.

We know it’s tempting to hunker down into a Stranger Things rabbit hole, but there are other ways to spend a warm September weekend. Ways that involve turning perishable foods into delicious, vinegary snacks, for example.

RECIPE: Chipotle Pickled Eggs

Yes, we’re talking pickling.

Plum jam or piccalilli packed with seasonal veg might be the obvious choice of preserve for this time of year, but that stuff requires sterilised jars and probably a small orchard. We said weekend project, not industrial catering job.

Instead, we suggest London picklemaker Freddie Janssen’s low-key (but high-flavour) recipes for chipotle pickled eggs and Amsterdam onions. No crates of fruit or special containers required—just a quick brine to throw in a jar along with the boiled eggs or softened onions.

After three weeks in the fridge, you’ll have a flavourful snack—ideal for enjoying along with a cold beer or pub-style with a bag of crisps.
