In this second episode we stay in Copenhagen and head over to Slotskælderen to explore the substance behind the phonetic nonsense of Smørrebrød, a culinary tradition unique to Denmark. Smørrebrød, or the Open Face Sandwich, if you will, was Danish cooking’s calling card way before foodies worldwide started bending over backwards in appraisal of new nordic cuisine. This is old nordic cuisine and with us to explain it, is Jesper Stougaard, co-owner of Dyrehaven and Fortunen.
